Recipe: Maple Walnut Wings - P1030100

Here’s a recipe for chicken wings combining the rich flavours of maple and walnut.

My maple walnut wings are really moreish, if I do say so myself! I didn’t add any spicy heat to them but chipotle or Tabasco would go well with them (and it’s easy enough to incorporate on your own). I would encourage you to try these as suggested in the recipe first though, to get a taste of just how yummy chicken, maple and walnut are together.

MAPLE WALNUT WINGS Yum

Ingredients for the Wings (16 pieces)

  • 8 wings (chopped at joint with tip removed);
  • Approximately 150ml of walnut oil (enough to give all the wings a good coating;
  • 50ml maple syrup (I used a rich amber maple syrup from Quebec);
  • 2 tablespoons of apple vinegar;
  • Sea salt to taste;
  • Black pepper to taste;
  • Pinch of thyme;
  • Chopped walnuts to taste.

Method

  • Preheat your oven to 250°C;
  • Marinate your wings in the oil, syrup, vinegar, and seasoning;
  • Gently toss the wings for an even coating of oil and placed on a baking dish big enough for all the pieces to be spread as a single layer;
  • Cook in the oven for about 45 minutes to 1 hour, checking them about 30 minutes in to see how they’re doing and turning them halfway through to make sure the wings are completely coated in the marinade;
  • Garnish with chopped walnuts.

Serve

Drain the wings of any excess liquid and let cool. But serve them while they’re still pretty hot for best results.
