Recipe: Rachel Green’s Guacamole

DSC_9661

Last week, I had the pleasure of trying out a range of Cole & Mason products in a test kitchen with Chef Rachel Green. Hosted by John Lewis, the occasion served as an fun way to experiment with flavours and seasoning with a range of herbs and spices and awesome kitchen gear – I loved Cole & Mason’s pestle and mortars and spice racks!

Rachel, a “woman for all seasons” who’s “cooking for Britain” was an absolute delight to cook alongside and to learn from. Observing her in the kitchen (not to mention getting to sample here her excellent food) was the highlight of the week. Nothing fancy but big on yum, Rachel’s recipe’s were down to earth, easy to follow and (most importantly) delicious.

Here’s her recipe for one of my favourite dishes, guacamole. Check back tomorrow and later in the week for more of Rachel’s recipes from our day with John Lewis and Cole & Mason.

Pestle and Mortar Practical: Make Your Own Guacamole

Ingredients

  • 3 avocados , ripe but not bruised;
  • Juice 1 large lime;
  • Handful of coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve;
  • 2 garlic cloves, crushed;
  • 1 chilli, red or green, “hot or not so hot”, de-seeded and finely chopped (optional);
  • Salt and pepper to taste.

Instructions

  • Halve and stone the avocados (saving a stone) and use a spoon or avocado tool to scoop out the flesh into the mortar and pulverise with the pestle;
  • Determine your level of heat and add appropriate chilli;
  • Place unpeeled garlic clove in garlic press and add to the mortar;
  • Add finely chopped coriander;
  • Season with salt and pepper;
  • Use the pestle to roughly mash everything together (continue mashing for a smoother finish);
  • Scatter with rough cut coriander leaves;
  • Adjust seasoning, lime juice and garlic to taste;

Serve

  • Serve with crudités or tortilla chips and enjoy the fruits of your labour;
  • (The addition of fine cut onion and tomato add extra flavour and colour).
