World Cup Recipe: Olivier Salad

Ready for the World Cup to commence? Me too! But do you know what you’re going to eat while the matches are on? I’ve teamed up with Aldi to share the recipe that’s tasty, inexpensive and very easy to prepare: Olivier salad. It’s perfect for snacking while watching the footy and for casual entertaining whatever the occasion.

Having trouble deciding whether to make, potato, egg or chicken salad? Do all three for one extra yummy dish. Olivier salad is a traditional Russian salad featuring an assortment of basic ingredients (yes potatoes, eggs and chicken are three of them). All the ingredients for a tasty Olivier salad can be found nicely priced at Aldi.

I thought with the 2018 World Cup being hosted by Russian, this classic cold dish that can be prepared ahead of time and that keeps fairly well for a day or so would be a smart choice to share before the tournament kicked off.

Variations on the Olivier (aka Russian salad, aka Stolichny salad) are many but I think my version is authentic and delicious. If you can boil and egg, chop vegetables and stir a bunch of ingredients around in a large bowl you’ll have no trouble following this recipe.

OLIVIER SALAD Yum

Ingredients (10-12 servings)

  • 3 boiled medium potatoes;
  • 4 boiled medium carrots;
  • 8 hardboiled eggs;
  • 800 to 900g boiled chicken (I like a mix of white and dark meat);
  • 1 small onion;
  • 8 small dill pickles;
  • 1 can (400g) of peas cooked and drained;
  • Mayonnaise to taste (about 400g);
  • Salt to taste.

Method

Basically, you need to dice everything (into fairly thick chunks) except for the peas, Mayo and salt. Let the cooked ingredients cool and mix all together in a large bowl. I find it best to add the mayo at the end and then season with salt.

Serve

Serve as a side dish or on its own. In addition to sport and binge TV time, Olivier salad is great for BBQs and picnics.

Shopping at Aldi

Aldi makes food shopping convenient and affordable. Dropping in to browse the aisles for this recipe was a breeze for me. And I hardly paid more than a tenner for all the ingredients (with plenty of potatoes, carrots, etc for later use).
