Recipe: Prawn Dogs (aka Shrimp Puppies) with Creole Cocktail Sauce
Growing up in Georgia, whenever served fish or seafood there would always be a heap of hushpuppies on the side. The best way to sum up a hushpuppy is to describe it as a deep fried cornbread doughnut hole. Yeah, over the top and really yummy … and a particularly awesome accompaniment to most fishy dishes.
My own mad creation, is the prawn dog, a lighter version of these down home treats that combines the seafood dish and its starchy side into one ultimate finger food item. Essentially a corn muffin with a prawn tail sticking out of it, prawn dogs (or shrimp puppies if you prefer) are a fun to serve at parties or for snacking while watching a movie or catching a game on TV. They’re a great dish to make with and serve to kids as well (maybe you can call them “dragon tail muffins” or something like that).
PRAWN DOGS WITH CREOLE COCKTAIL SAUCE
Prawn Dog/Shrimp Puppy Ingredients (12 single servings)
- 12 king prawns (with their tails still in the shell);
- 500ml of fine cornmeal;
- 250ml plain white flour;
- 1 tablespoon baking powder;
- 2 tablespoons of ground coriander;
- 1 tablespoon of oregano (fresh and finely chopped is definitely best);
- 1 tablespoon of sage (fresh and finely chopped is best);
- 1 tablespoon of celery salt;
- 1 tablespoon black pepper;
- 1 clove of finely diced garlic;
- 250ml of grated Cheddar (I like extra mature);
- 500ml of whole milk;
- 12-24 sliced green jalapeños pieces (I used Old El Paso brand);
- 2 tablespoons of the vinegar from the jar of jalapeños;
- 250ml cup of corn kernels (drained from a tin or freshly boiled);
- 2 eggs;
- 50ml honey;
- 1 teaspoon of vegetable oil;
- 2 tablespoons of paprika (I like the bittersweet “agridulce” smoked variety).
Creole Cocktail Sauce Ingredients
- 400g chopped tomatoes from a can;
- 200g passata;
- 2 tablespoons of Worcestershire sauce;
- Juice from half of a lemon;
- Juice from ¼ of a lime;
- 2 tablespoons of Tabasco sauce;
- 1 tablespoon of celery salt;
- 1 tablespoon of black pepper;
- 1 clove of finely diced garlic;
- 2 tablespoons of grated horseradish (or a few horseradish cream to taste);
- 200g of finely chopped celery.
Method for the Prawn Dogs
- Preheat oven to 220º C (425º F);
- De-shell your prawns except for the end bit on the tail – set aside in the fridge or somewhere dark and cool;
- Place the cornmeal, flour and baking powder in a large bowl – mix thoroughly;
- Add the ground coriander, oregano, sage, celery salt, black pepper and garlic – mix well;
- Add the Cheddar – mix again leaving a well in the centre of your bowl;
- Pour in the jalapeño vinegar and half the milk into the well – mix thoroughly smoothing out any clumps;
- Pour in the rest of the milk aiming toward any dry spots in the batter;
- Add the honey and corn – mix again;
- Add one lightly whisked egg – mix thoroughly one more time ensuring all ingredients are evenly distributed;
- Coat the bottom of your muffin tray with a thin layer of vegetable oil (or cooking spray or butter);
- Spoon the batter into the muffin tray’s cups;
- Bake the muffins for about 5 minutes;
- While the muffins are cooking, crack another egg into a bowl and lightly whisk it;
- Take the muffins out of the oven and let sit for a couple of minutes;
- One at a time, lightly dip each prawn into the bowl of egg and firmly but gently put each one into a muffin with the tail sticking out (I use a butter knife to help secure each prawn in its muffin);
- Sprinkle the paprika on top of the muffins;
- Slide a slice of pickled jalapeño around each tail (this should help the tail to stand up);
- Place the muffins back in the oven and cook for another 15 to 20 minutes or until they start to brown on top;
- Let sit for around 10 minutes covered with a tea towel;
- While the prawn dogs are baking, you’ll have plenty of time to make your cocktail sauce.
Method for the Creole Cocktail Sauce
Essentially all you’ve got to do for the sauce is put all the ingredients together in a bowl and mix thoroughly. For best results, start with the chopped tomatoes, passata and the rest of the liquids then add the seasoning and solid bits. Place in the fridge until ready to serve. Garnish with fresh oregano and sage if you have any leftover (or maybe some parsley, coriander and/or basil if you’ve got some).
Serve
Serve your prawn dogs as a finger food with the cocktail sauce as a dip alongside some lime wedges. Pluck the prawn out first or save it as the “prize” at the end.
You can also serve the muffin in a bowl “swimming” in the sauce like it’s soup.
If planning to serve the dogs as part of a larger meal, I recommend coleslaw, green salad, fries, fried okra, succotash or roasted corn as complementary dishes. Prawn dogs would be a sure hit at any BBQ or fish fry too – either as a starter or as a side.
The cocktail sauce on its own is a great one for all kinds of dishes, including raw prawns, celery or any sort of chip or cracker that you might normally eat with ketchup or salsa.

No Sir Elton But Still Good Fun at BST Last Night
To say I wasn’t disappointed when I heard that Elton John wasn’t going to perform as scheduled at last night’s BST at Hyde Park would be a lie. Nevertheless, I had a lot of fun at the festival and was impressed with how the organizers went about handling the news when the superstar announced he wouldn’t be able to play.
I can’t really say I a huge fan of Sir Elton but I was really looking forward to seeing him perform. I mean, wow, that dude’s got some amazing songs under his belt. Apparently, he’s also got a bit of a tummy ache under it as well. The reason, the superstar songwriter wasn’t able to play was because he came down with a bad case of appendix abscess surrounding retrocaecal appendicitis. Ouch!
Bummed? For sure. But as I mentioned in my preview post about the event, I was mainly going to see Elvis Costello. And he produced a fantastic set with more than a few of my favourites. The rearranged non-Elton line up then saw Ray Davies take the stage after Costello.
I thought it was cool how AEG Live (the folks who put on BST) handled Elton John’s cancellation as well. Existing ticket holders for Friday 12th July automatically received a full refund with the full value of their original ticket orders credited to the original payment method within seven working days. And by bringing their existing tickets along to Barclaycard presents British Summer Time, Hyde Park on Friday 12th July only, they were given free access. AEG Live also made even more tickets available for last night’s show.
All in all it was a mellow evening and a lovely evening to be in Hyde Park, sitting the grass and listening to live music. At the very least, the festival served as fine excuse just to hang out with my girlfriend and catch up up over some live music. I’ll definitely keep the festival in mind for next year. If you’re there tonight for the Stones (lucky you!) or heading over tomorrow for Lionel Richie and Jennifer Lopez, have fun!

Teroforma Whisky Stones + Jura Festival Edition 2013
Giving my new Teroforma Whisky Stones a test run with a damn fine single malt and loving every last sip!
Back at the end of May, I wrangled my wily way up to the Hebrides for a few nights stay on Jura during its annual whisky festival. There’s a proper write up about that adventure coming your way via City AM at some point down the road (and I’ll be sure to holler when it is published). But until then lemme say the island of Jura is a truly special place, and the whiskies distilled there are fantastic. I especially like the smoky and rich Jura Festival Edition 2013. I’ve got bottle number 223 (from a limited run of only 663) and have been sipping from it off and on since I got back.
More recently, I got hold of a bag of Teroforma Whisky Stones. So I thought I’d try ’em out with this mighty Jura malt.
Teroforma Whisky Stones have been on the market for awhile in the States but have only just been released in the UK. The non-porous stones are hand cut soapstone cubes from the oldest soapstone mill in Vermont. They’ve been designed to perfectly chill cask-aged spirits. So essentially, you freeze ’em and then add ’em to your drink to cool it down without diluting it or making it too cold. They don’t affect the flavour of the drink at all either.
I’m pleased to report stones have done justice to my Jura juice!
They stones are cool (no pun intended), and it’s nice to have that icy tingling sound through to the last drop of my drink. The stones are available in sets of nine (£20) at Selfridges, Habitat and Master of Malt. Find out more at teroforma.com.
As for the goofy Homer tumbler, it’s another recent acquisition. I was in Paris last week and picked it up as a prize with my “Menu Homer” (a doughnut shaped cheeseburger with a side of fries) at fast food restaurant Quick. Doh. More to come about my time there too.

Air Europa Now Flies London Gatwick to Montevideo, Uruguay (CDCLifestyle)
Montevideo and the rest of Uruguay are now much closer to London thanks to a new route recently opened by Air Europa in June. The award-winning Latin America specialist airline launched its first flights from London Gatwick to Aeropuerto de Carrasco in Montevideo on the 3rd of June, granting UK travellers access to the Uruguayan capital (and one of South America’s fastest growing tourist destinations) as well as access to luxury resorts of Punta del Este and Jose Ignacio.

Good Stuff
Here’s a quick little list of good stuff I’ve recently come across and thought was worth sharing with you. Enjoy!
Ludlow Food and Drink Festival Preview at Cookbook Cafe: I’m heading out of town for a couple of weeks, something I’m very chuffed to be doing. However, I’m gutted I won’t get to check out the London preview of the internationally renowned Ludlow Food and Drink Festival. Taking place 9 to 12 July, Cookbook Cafe at the Intercontinental London Park Lane hotel (one of my favourite eateries in London!) will welcome top independent food and drink producers from the small town with the large reputation for gastronomy with a range of events to whet everyone’s appetites! So bummed I’ll miss this! Fingers cross, maybe I can try to make it to the actual festival this September.
Free Coffee at Waitrose: I’ve had a myWaitrose loyalty card for awhile but have just recently discovered that one of its perks is a free tea or coffee everyday – you don’t even have to purchase anything.
#fansoffizz: I recently sat in on an enlightening and delicious blind wine tasting at the lovely (and super conveniently located) Charing Cross Hotel. The tasting pitted a number of Champagnes against English sparkling wine. I tended to think the two were pretty equal. However, my favourite of the evening was English: Chapel Down’s Blanc de Blancs.
Britten War Requiem at St Paul’s Cathedral: To mark the 100th anniversary of Benjamin Britten’s birth, the composer’s War Requiem was performed at St Paul’s Cathedral by the City of Birmingham Symphony Orchestra (who premièred the work in Coventry Cathedral back in 1962) alongside the CBSO Chorus and the Choir of St Paul’s Cathedral with Evelina Dobraceva (soprano, replacing Albina Shagimuratova), Toby Spence (tenor), Russell Braun (baritone) and Edward Gardner conducting. This epic performance was a moving one – but just one of many in the 2013 City of London Festival line up. The festival continues through this month with tons more cultural events and a range of activities many of which are free!

Theatre Sneak Preview: Sincerely, Mr Toad
Keith Jack (Any Dream Will Do Finalist, Joseph and the Amazing Technicolor Dreamcoat) leads a 12 strong cast in Sincerely, Mr Toad, a brand new musical from Sell A Door Theatre Company in association with Greenwich Theatre. The show explores the life of Kenneth Grahame, author of The Wind in the Willows, and looks at the tragic events that inspired the popular writer’s most famous work.
I tagged along to last week’s press preview for Sincerely, Mr Toad and from what I could tell from the selection of songs presented as well as some brief convo with the creative team and cast, the show’s got all the right elements to make it as a hit and should have a strong run at this year’s Edinburgh Festival Fringe.
Before it heads to Fringe, the show will preview at South Hill Park in Berkshire late July. After Fringe, Mr Toad will go on tour across the UK ending with a four night run at Greenwich Theatre in September.

Herbfest at London’s Southbank Centre (OneTravel)
Herbfest is a new “botanical experience” for summer 2013 at London’s riverside Southbank Centre. It’s part of the centre’s greater Festival of Neighbourhood which runs until September 8th and offers locals and visitors alike with a nicely scented opportunity to learn about herbs, eat food prepared with fresh herbs and simply relax in a leafy green urban oasis.
