Do you have an open mind when it comes to making Scandinavian style open faced sandwiches?

Then see what you think about these four easy recipes I came up with using Leksands Original Rye Crispbread triangles as the base of each for extra crunch and deeper flavour.

In each recipe, ingredients are listed in order of which you should add first. 

I don’t go too into detail about amounts and measurements with these sandwich combinations. Stack ‘em high but not too high is the best advice I can give and to suggest that you go with what you think is tastiest when assembling your own at home. So if I don’t specify quantity just assume I mean add “to taste”.

With some of the chopped veg and fruit ingredients, you might find a heaping tablespoon should do the trick.

You might also find that mixing up some of these recipes can lead to other yummy sandwiches.

The Buffalo Egg

  • 1 triangle of rye crispbread
  • 1 sliced hardboiled egg
  • Blue cheese (I like Kavli Ädelost – Blue Cream Cheese)
  • Chopped celery
  • Chopped walnuts
  • Mayonnaise
  • Sunflower seeds
  • Chives
  • Frank’s Hot Sauce
  • Sea salt

Pickled Pucker Open Faced Sandwich on Crispbread


The Pickled Pucker

  • 

1 triangle of rye crispbread;
Picked herring (I like Abba Klassik Matjessill)
  • Pickled beetroot (I like Beauvais Rødbeder)
  • Diced onion
  • Diced apple (I prefer a red apple)
  • Yellow mustard
  • Mayonnaise

Pear Salad Open Face Sandwich on Crispbread

Pear Salad

  • 1 triangle of rye crispbread
  • Diced pear
  • Shredded iceberg lettuce
  • Chopped walnuts
  • Crumbled or grated Vasterbotton (or another hard cheese such as Cheddar)
  • Mayonnaise
  • Chives

Smoked Trout and Hazelnut Open Faced Sandwich on Crispbread


Smoked Trout and Hazelnut




  • 1 triangle of rye crispbread
  • 
Salted butter (applied as the bottom layer)
  • Smoked trout
  • Diced onion
  • Diced apple
  • Chopped hazelnuts
  • Chives
  • Squeeze of fresh lemon juice
  • Black pepper
