And believe me, I’ve looked long and hard – only to return to NOLA with greater appreciation for its graciously crafted cuisine and the profound depth of its food culture. Get ready, y’all. It’s time to eat!

An opportunity to visit the Crescent City and take a significant bite out of its dynamic dining scene came my way back in September and I relished every edible moment of it. My maple walnut wings are really moreish, if I do say so myself! I didn’t add any spicy heat to them but chipotle or Tabasco would go well with them (and it’s easy enough to incorporate on your own). Last stop on our California tiki bar road trip was sunny San Diego.

Sadly, Kemey and I only had one night to enjoy San Diego – a standalone destination worthy of a far longer visit. But I’d say we packed as much into our overnight as possible. And our whistle stop tour was a conch shell blowout as far as the tiki seeking was concerned. After extensive renovations Spanish restaurant group, Brindisa Kitchens, has relaunched its Shoreditch restaurant, Tramontana, as Tapas Brindisa.

I dropped by the launch party last night. I was impressed with the new digs (loved the massive marble bar) and couldn’t get enough of the food on offer. The sliders with the morcilla mixed in with the mince were irresistibly delicious. The paella was maybe the best I’ve ever tried (for real). Continue reading

Poke popularity in London continues to intrigue me. Don’t get me wrong though. I love the stuff and am glad to see I’ve got options on where to get it when I’m on the go. One such eatery is Ahi Poke in Fitzrovia.

Ahi Poke offers a good – if London-ised – version of poke in a short but tasty menu with an assembly line approach to fresh preparation. Seafood is sustainably caught. Veg is locally sourced when possible. Prices are reasonable, which bowls ranging in price from £5.95 to £9.95. Service is friendly and speedy. The dining area is pretty basic but clean, well light and pleasantly decorated with fun and sunny wall paintings. Continue reading

I’ve just gotten back from a visit to this tropical island paradise. The laid-back lifestyle, dramatic coastline, endless opportunities to get wet in scenic locations, warm weather, and equally warm welcome of the Samoans all completely blew me away. I don’t think I was quite ready for just how wonderful my time there turned out to be. I certainly wasn’t ready to come back home (and to the onset of winter!).

Enchanted Day at Disneyland | #TCTikiTour

Next up on our California tiki tour was a visit to Anaheim for an especially tiki day out at Disneyland.

It was easy enough getting to Anaheim from our Pasadena hotel. We were there on Labor Day though. So it took some waiting in touch-and-go traffic to actually get in the park once we were near. The place was packed for sure – and I imagine to a far greater degree than usual. But, by making a bee-line to Disneyland’s main attraction, the Enchanted Tiki Room (well, the main attraction for a tiki tour anyway), taking advantage of Fastpass (a time allocation system for queue-free access to rides) and generally just having an easygoing approach to rides and activities, Kemey and I had a blast. Although the province of Quebec has long been very rightfully celebrated for its amazing French cuisine, there are other types of food available in the region. On Set in France | The Incantation

Last month while passing through LA, I got to catch up with childhood friend and filmmaker Jude S Walko. Jude was in town working on his latest project and directorial debut – indie horror flick, The Incantation. But it wasn’t the first time I’d seen Jude this year. Filming for The Incantation took place in France over the summer, and I was able to slip down to its location in the Loire Valley for a behind the scenes snoop during shooting.

Based on the original script written by Jude, The Incantation is the first original content feature film for Blue Falcon Productions. It follows young American Lucy Bellerose as she pays a trip to her family’s ancestral castle in rural France.  Continue reading

Sideways Detour to Solvang | #TCTikiTour

Continuing with the More part of our California Tiki Tour & More road trip, Kemey and I made our way to sunny central coast city of Solvang – just up the road from Santa Barbara and about a 100 miles north of Los Angeles.

Not in the know about Solvang? I wasn’t either before this trip. Here’s the gist.

Solvang is a small Danish town in the Santa Ynez Valley of Santa Barbara County. By Danish, I mean Danish immigrants from the Midwest founded it. In search of milder winters, they moved on to California to settle in Solvang in 1911. Then came the fake windmills, Danish bakeries, a replica of Copenhagen’s Little Mermaid statue … stuff like that. It’s kitsch and quaint – a walkable and extremely pleasant spot to relax. Last week I attended a delicious cooking session where the key ingredient was my favourite cheese: Parmigiano-Reggiano. During the event, a number of recipes were introduced. One was especially yummy – and super easy to make: walnut and Parmesan pesto. So I thought I’d share it with you here.

My third and final recipe for the Tom Hixson Masterchef Challenge is an especially meaty dish: bone marrow burgers with buttermilk béchamel.

Ready to take your burgers to the next level? My recipe for bone marrow burgers with buttermilk béchamel should do the trick!

This recipe uses Tom Hixson’s Bone Marrow Beef Butter Burger patties, but most any beef patty could be substituted. That said, Hixson’s 28 day dry aged beef with marrow butter is exceptionally delicious and (in my humble opinion) pairs perfectly with my buttermilk béchamel sauce. Continue reading
