Pho-nomenal Cocktails

I dropped by the new(ish) Pho outlet in Islington a couple of weeks back for a fun and friendly cocktail reception featuring Son Tinh spirits. Pho restaurants are the places in the UK to import and serve the Vietnamese liquors. Yummy stuff.

The One, world’s first British blended whiskey

Bringing together a range of whiskies from across the British Isles, The One is the inaugural product from The Lakes Distillery – the first whisky distillery in Cumbrian (yes that’s in England) in over a century. Yep, I had a taste. With a hint of spice and a bit of smoke and complexity, I liked it too and reckon it’s well worth seeking out if you’re a fan of blended whiskies.

Casillero del Diablo’s Devil’s Collection and Wine Legend Movie

Have you seen this slick ad promoting the launch of Casillero del Diablo’s Devil’s Collection? It’s fun to watch. But is are the wines any good? Oh yeah! At a recent launch, I especially enjoyed sipping the Devil’s Collection fresh and juicy white – a blend of 70% Sauvignon Blanc, 25%Chardonnay and 5% Gewürztraminer, and a red blend of 60% Syrah, 25% Cabernet Sauvignon and 15% Carmenere. At a recommended retail price of £8.99, it’s a delicious quaff for good value.

I swung by the Gant Showrooms in Knightsbridge last week for a sneak peek at its line of Spring/Summer 2014 menswear. Already a fan, I was impressed with what the brand has in store for the upcoming season. Expect to see a toned down but broad range of colours running through Gant’s perennially fashionable styles of sportswear and casual clothing made to last with quality materials.

Are You Still Smoking?

C’mon, you know you really should stop smoking. It’s becoming less and less acceptable these days, and the cost to your health and quality of life is incredibly high.

I used to smoke, and at different times in my life I used to smoke a lot. As an exsmoker, I’m well aware of how much healthier I am now and of how much more money I have than I did when I was shelling out seven quid and over for a pack of smokes.

I’m also clued in to how smelly smokers are and how ridiculous they look sucking their lives (and health and money) away due to addiction to a cancer stick. Among the many nice things about not smoking anymore is that I’ve regained my sense of smell. The downside to that is I realise how stinky some people are. Also, when I see people standing around having a fag rarely do they appear glamourous or carefree to me. Actually, they come across as looking weak and rather desperate. It’s embarrassing to think about how much I must have stunk when I smoked and how pathetic I probably looked much of the time when I was a smoker.

So seriously, what are you waiting for? It’s time to quit smoking. There are a gazillion ways to quit: gum, the patch, hypnosis to name but a few. There’s even an initiative to help people quit that’s been set up by European Commission. The initiative is called ExSmokers, and if you have a quick look at the site you’ll see they have new free app called ICOACH. It’s a free digital health coaching platform available in 23 official EU languages that’s designed to assist those smokers who are unwilling to quit and who run a high risk of relapse. So far, ICOACH results have been impressive with more than a third of the people starting the programme going on to quit smoking.

However you choose to quit and whatever aids you take advantage of the main thing is to commit to quitting and to do it soon. Feel better, look better, smell better and keep your money for better things.

London Celebrates Bonfire Night (OneTravel)

November 5th is Bonfire Night (aka Guy Fawkes Night) in England and is an occasion to commemorate the Gunpowder Plot of 1605 when Guy Fawkes (yep, the dude those V for Vendetta masks are named for) tried to blow up the Houses of Parliament and kill King James I. These days the historic event is “celebrated” with fireworks and bonfires. Here’s a list of five of the best Bonfire Night happenings in London.

Recipe: Chilli con and non Carne

Recipe for Chilli con and non Carne

Autumn is here and there’s a chill in the air. That means it’s a great time to cook some chilli on the hob! Here’s my recipe for chilli con carne – or non carne if you prefer the vegetarian option and even some tips for making a chilli Quorn carne if you’d like to go veggie but still get some meaty flavour and good dose of healthy protein.

I’m been working on this recipe for years now. It keeps getting better. As much as I like to frame making my chilli con carne as a special treat I’m making for whomever is going to dine with me, the fact is cooking it is a totally selfish act allowing me a chance to eat something I crave.

I must warn you: there’s some real heat to this recipe, especially if you have it a day after preparing it. Tone down or rev up as you see fit.

CHILLI CON CARNE Yum

Ingredients (for ten to 12 bowls)

  • 250g pre-soaked kidney beans (dried beans are best but drained from a can is a decent alternative);
  • 250g pre-soaked pinto beans (dried beans are best but drained from a can is a decent alternative);
  • 1200g of chopped tomatoes (3x400g cans);
  • 2 boiled, peeled and chopped sweet potatoes;
  • 2 grated carrots;
  • 1 finely diced red apple;
  • 1 chopped white onion;
  • 2 chopped shallots;
  • 2 chopped bell peppers;
  • 4 minced cloves of garlic;
  • 2 tablespoons of vinegar (I like cider vinegar for this recipe);
  • 3 limes;
  • 2 tablespoons of maple syrup;
  • 2 heaping tablespoons of cocoa powder (I like Grenada Chocolate Company’s Pure Organic Cocoa Powder) or 50g dark chocolate (100% if you can get it – the more cocoa and less sugar the better);
  • 2 tablespoons of vegetable oil;
  • 4 tablespoons sea salt;
  • 2 tablespoons of chilli powder;
  • 2 tablespoons of ground cumin;
  • 2 tablespoons of ground coriander seeds
  • 1 tablespoon of paprika (I like the bittersweet “agridulce” smoked variety – especially for this recipe);
  • 1 teaspoon of cayenne;
  • 1 tablespoon of cinnamon;
  • 1 teaspoon of white pepper;
  • Leaves from 1 sprig of thyme;
  • Leaves from 2 or 3 sprigs of fresh oregano;
  • 60g chopped fresh coriander;
  • 100g of smoked cheese (I like to use half Gouda and half Applewood smoked Cheddar);
  • 330ml lager (I suggest something along the lines of Corona);
  • Dash of whisk(e)y (I suggest Bourbon – nothing too fancy though);
  • 1 bay leaf;
  • 2 dry chipotle chillies;
  • Freshly ground black pepper to taste;
  • 30g of freshly diced chives; and
  • 200g of sour cream.

Make it Meaty

  • 400g lean mince;
  • 1 chopped chorizo sausage with the skin removed (the kind for cooking not a dried one); and
  • 4 strips streaky bacon finely diced (I like maple cured).

For an even meatier experience, consider adding other meats. I’ve added brisket, minced pork, chicken thighs and spareribs before to this recipe, and the results were really yummy. Go wild.

For Chilli Quorn Carne

A great veggie to go veggie but up the savouriness of this recipe is to substitute 600g of Quorn mince for the meat along with a chopped up Quorn Frankfurter or two. Add an extra tablespoon of paprika, another tablespoon of maple and an extra shallot as well.

Method

These instructions are for the meaty version of my recipe. For the veggie or Quorn version simply subtract or substitute as required.

  • While your sweet potatoes are boiling (they’ll be ready when you can easy stick a fork in them), add the beans, tomatoes, apple, onion, shallots, carrots, bell peppers and garlic to a bowl;
  • Thoroughly mix;
  • Pour in the vinegar, juice from one freshly squeezed lime, the maple syrup and the cocoa;
  • Thorougly mix;
  • Add 2 tablespoons of sea salt, chilli powder, cumin, paprika, cayenne, cinnamon, white pepper, thyme and 30g of chopped fresh coriander to the bowl and mix thoroughly;
  • Pour in the lager and the dash of whiskey and mix thoroughly;
  • Add the cheese, chipotle chillies and the bay leaf and let sit;
  • When the sweet potatoes are ready and cool enough to handle, peel and slice into chunks and place in the the bowl and give it all a good stir;
  • In a large saucepan, brown the mince in vegetable oil and 2 tablespoons of sea salt;
  • Once browned add a few spoons of the liquor from your bowl to the saucepan so that it just covers the meat;
  • Add the bacon and chorizo and give a good stir;
  • Add the ingredients from the bowl and mix thoroughly;
  • Bring to a boil and let everything cook at a low boil for about an hour;
  • After simmering for 30 minutes it’s ready to eat, but I recommend letting it continue to cook at a low heat for 5 or 6 hours for best results. If you can make this the day before you plan to eat it, even better!
  • Before serving add freshly ground black pepper to taste and gently stir into the chilli.

Serving

Garnish with freshly chopped chives, coriander and serve with a dollop of sour cream and a squirt from a wedge of lime. Serve alongside some cornbread, rice or tortillas or atop hot dogs or … do I really need to tell you how to enjoy a bowl of chilli con carne?

Two Cocktails for £10 at The Liquor Cabinet, Hackney Road

There’s a new bar opened up in Shoreditch. Okay, that’s not really news, is it? But a smartly curated selection of spirits and a range of superbly crafted hand bottled cocktails make The Liquor Cabinet well worth shouting about. Plus, I blagged a way for my readers to get two cocktails for a tenner! Keep reading for more about this fantastic bar and to find out about my exclusive two-for-a-tenner cocktail special (offer good through January 2014).

Just off Hackney Road in the basement of the Golden Grill kebab shop (yep, where Mezcaleria Quiquiriqui used to be) is The Liquor Cabinet. Open now for a couple weeks, the bolt hole bar offers a pared down, back-to-basics, no nonsense approach to getting one’s drink on. That suits me just fine, and as I told owners Thom Docker and Mikey Seddon when I visited their bar a few nights ago, I might just fall in love with this place.

Thom and Mikey only serve spirits, wines and craft beers that meet the approval of their apparently rather sophisticated palates. I certainly thought their booze selection was pretty close to perfection. Blanton’s Single Barrel Whiskey, Lagavulin 16 Year Scotch, Del Maguey Minero Mezcal? Yeah. Woodford Reserve as the house Bourbon? Double yeah. The boys do pre-made bottled cocktails too, which they reckon is a more efficient way to serve and ensures a better mix than making on the go. As I sipped one of their lovely Old Fashioneds the other night, I certainly had no qualms.

Last night I attended an Evening of Tea Discovery at The East India Company shop on Conduit Street in Mayfair. The highlight of the event was a tasting session led by Lalith Lenadora, The East India Company’s extremely knowledgeable Tea Master. In addition to sipping a range of exquisite teas, I actually learned a thing or two about the history of tea, what the different varieties of it are and how to distinguish the good from the gorgeous.

The tasting was held to celebrate the recent launch of EIC’s Chakra-Banyan Tree promotion, something I mentioned on the blog a few week’s back.

Heavy Metal Bowling vs Bompas & Parr’s Metal BBQ

Aw man, I’m going to be out of town and thus unable to attend this event but look: Heavy Metal Bowling – your chance to “finger holes, caress balls” while crushing pins, eating BBQ and downing cold beer – all to a soundtrack featuring Black Sabbath, Electric Wizard, Elder, The Sword, Slayer, Sleep, Metallica.

Few can match the thrill of the screaming guitars, thunderous bass drums and explosive pyrotechnics of a heavy metal concert when it collides with bowling and barbecue. This November, the team who brought you Heavy Metal Bowling, is teaming up with Bompas & Parr’s Metal BBQ for a night of growling music, thundering ten-pin and food so hairy and muscular you can really gorge on it.

Word is there’ll be strippers, pyrotechnics and even a “condiment castle”. The highest scoring bowler of the evening will win the same model of sword used by Arnold Schwarzenegger in Conan the Barbarian. In a collaboration with New York owned The Juicery, 108 Marylebone Lane hosts its first ever pop-up from now until the end of January offering a nutrious menu of 16 fresh juices, shots and smoothies – including some exclusives designed by the nutritionist Amelia Freer – alongside an expanded breakfast menu and light bites to eat-in or takeaway.

In a country whose very gastronomy has achieved world heritage status, finding myself somewhere of cultural or historical significance paired nicely with the safe bet that I wouldn’t be far from something seriously delectable too. Here are but a few of the tastier highlights from my recent jaunt round La Región – all well within easy and scenic drives of Montpellier–Méditerranée Airport or Nîmes-Alès-Camargue-Cévennes Airport.

Monday found me nosing my way through Bond Street’s Westbury Hotel at the 2013 Great Sherry Tasting. With nearly 200 sherries from more than 30 producer, the event was claimed to be the world’s largest.

A highlight of the tasting for me was a chance to sit in on a Traditional Aging seminar hosted by Beltran Domecq, President of the Consejo Regulador de las DD.O. Jerez-Xeres-Sherry, Manzanilla de Sanlucar y Vinagre de Jerez. That’s a mouthful, as were many of the gorgeous sherries I had the pleasure to sample that day.

During the seminar, there was a brief moment when I thought I’d died and gone to sensory overload heaven. I so was bowled over by the intriguing aroma and fascinating flavour of Bodegas Tradicion’s Oloroso VORS 30 year old – nose and palate notes read something like “corn tortillas … jamon serrano … fried doughnuts in a wooden box … with a strawberry start and a bitter end”. I’m pleased to report it’s pretty easy to come by here in the UK.

The Chase – Volvo Trucks Chased by Bulls in Spain

Wanna have some fun? Get a Volvo truck, paint it bright red and drive the thing through the streets of an ancient Spanish town, such as Ciudad Rodrigo, during its annual running of the bulls festival.

Oh wait, never mind. That’s already been done by Hollywood stuntman, Rob Hunt in the nifty little film, The Chase. Specialising in precision driving stunts, Hunt’s work has been featured in action flicks like Prince of Persia, Batman Begins and James Bond: Quantum of Solace and proved to be just the ticket for this amped up and adrenaline infused romp.

Directed by Oscar-nominee Henry Alex Rubin, The Chase was shot live and stars Hunt as the fast-reflex driver along with locals from Cuidad Rodrigo (including the mayor), a herd of 800kg bulls and of course a shiny red Volvo FL 12-tonne truck manoeuvring the tight lanes of this age-old Spanish town. Behind the scenes, a crew of 250 people, two veterinary teams, 28 medics and eight police teams worked to make sure the film was made without a hitch or any injury to participants (human and bovine).

Situated in Salamanca in north-western Spain near the Portuguese border, the cathedral town of Cuidad Rodrigo and its 14,000 residents host the Carnaval del Toro every year. Dating back to 1417, it’s the oldest festival of its kind. Yep, yet another place to add to the list! Find out more at carnavaldeltoro.es.

London Daily Photo: Did You Celebrate Apple Day?

Did you know that yesterday was Apple Day? Honestly, I wouldn’t have realised it either if I hadn’t been for the folks behind English Apples and Pears kindly inviting me along to an English Apple tasting and cheese pairing at Marylebone’s fabulous La Fromagerie on Moxon Street.

My favourite apple? Easily the Egremont Russet, a crisp and juicy fruit with a nutty flavour and rough skin. Look for it throughout fall and into the new year at quality shops.

Fave cheese? All of them (La Fromagerie is a dream of a cheese shop) but I kept going back for the melty Tunworth and the crusty and complex Cote Hill Blue.

Brent Butane Asks: Were You Born with a Silver Spoon in Your Ass?

This farcical yet informative ad featuring legendary stuntman Brent Butane rolling around on a Segway with American flags flapping proudly as he share details about Bell car insurance actually had me laughing out loud a couple of times. If you like your wise cracks mixed with crass humour, it’s well worth a view.

Born in Reno, Nevada in 1943, Brent was always destined for stardom as his dad mixed with the stars on a regular basis…as a handyman on the Paramount lot in Hollywood. Brent got his first taste of the industry as an enthusiastic 20 year old, cleaning up on the set of The Birds and knew from that moment, that the screen was for him. His big break came in 1968 as “5th background ape” in Planet of the Apes, and when falling over due to lack of vision in his costume, his potential as a stuntman was spotted by a producer who told him he could be the next big thing.

Brilliant stuff and a very clever way to peddle car insurance. The Butane ad is certainly a lot more memorable that most of what’s out there – I can’t say I even know of any other car insurance ads – and Brent Butane is undoubtedly a unique spokesperson.

You know me – I love London. The thing about living here for over ten years though is that I experience the city like a local not as a visitor. Despite often viewing the city through a rather rose-tinted lens, I must admit the veneer of my life in London wore off some time ago. So, when folks planning to visit London hit me up for advice and recs, I’m sometimes left wondering what exactly I should suggest. Sure, I’ve got some must-see tips that I reckon everybody ought to consider checking out when they visit, but as dynamic and varied as London is, getting to what to do here really boils down to what interests you most.

Now, with respect to which part of town is best to serve as your base, the easy answer is that it all depends. Are you heading here to work or to play, with the family or on your own, on a budget or with designs to blow one? Still, whatever brings you to London, there’s a strong argument that your best accommodation option is to stay in Soho.

Here’s a list of four reasons to consider London’s centrally situated and social heart of Soho when booking somewhere to lay your head.

Soho Atti-Tube

Think of Soho as a wobbly rectangle with four Tube stations as its four points: Oxford Circus at its north-western corner, Piccadilly Circus in the south-west, Tottenham Court Road to the north-east, and Leicester Square at its south-eastern edge. No matter where else you may want to go in town, getting there from Soho via the London Underground will be a piece of cake. And with the Piccadilly Line passing through at Piccadilly Circus and Leicester Square stations, you can even take the Tube to/from the airport if you’re flying in/out of Heathrow.

Centralise

With so many museums and major attractions within easy walking distance, you might not even need to rely on public transport when you’re here. Trafalgar Square, Big Ben, the British Museum, the Thames etc etc etc – it’s all just a short stroll away. Soho’s at the very centre of town offering convenient access with urban buzz.

Shop Till You Drop

Oxford Street with its flagship shops and department stores, Carnaby Street, Regent Street, Covent Garden, Seven Dials, Bond Street … London’s most celebrating shopping destinations are in or very near Soho giving you the chance shop, drop you bags at your hotel and then shop some more.

Eat, Drink and Be Merry

Whether you have an appetite for Michelin stars, pub grub or street food, you’ll find it in Soho where all budgets and tastes are attended to and the best of London’s dining scene is well represented. Of course, Soho is also nexus of London nightlife where some of its most beloved pubs and notorious nightclubs await revellers of every ilk.

Delicious Italian Seafood Menu at Pescatori, Charlotte Street

It’s been a few weeks now since I enjoyed dinner at Italian seafood restaurant, Pescatori. I haven’t forgotten how lovely it was though. Indeed, I’ve been waiting for the right time to publish my review so it didn’t get crowded out by other posts about places receiving more than an equitable slice of momentary hype. So with little happening in the tikichrisosphere today, here’s my review of fantastic Fitrzrovia restaurant, Pescatori. Buon appetito!

If you like seafood, you’ll been in heaven here. The menu is lengthy and a rather delectable read. There are plenty of non-fishy dishes listed (steak, pasta, risotto …), but if you go for anything other than the seafood and fish options you’ll miss out on what this place does best. I love my starter course of cannolicchi (three west coast razor clams, £8.95) from the raw bar as well as my main course of coda di rospo (pan roasted monkfish tail with n’duja and almond crust and zucchini scapece, £22). Yeah, I’d go back for it. For pudding, I had gnocchi di latte (baked sweet dumplings with glazed dark rum, £6.50) – a moreish and homey end to a satisfying meal! As impressive as the menu was, dining companion Kemey’s fancy was struck by something off the blackboard for her main: sea salt roasted sea bass. Prepped with precision at the table, it was a delicate dish worth having (I was lucky to have a bite!). A bottle of crisp and citrus Falanghina Beneventano IGT Bellamico (£6 for a 175ml glass, £17 for 500ml carafe and £25.50 for a bottle) served both our choices well.

Aside from the fab food, service was a treat. The restaurant’s expansive dining space is comfy. Given the calibre and celebrity of competing restaurants in and around Pescatori’s Charlotte Street address, I expected a certain level of quality from my experience there. Expectations were more than met and I found the restaurant to be well worth recommending. Keep Pescatori in mind when in Fitzrovia and hankering a great meal.

The fine folks from Kikkoman invited yours truly out earlier this week to upscale Japanese restaurant Matsuri St James’s for a soy sauce masterclass taught by Chef Simon Hulstone.

Well known for using soy sauce in a variety of dishes at The Elephant restaurant in Torquay, Hulstone demonstrated how a little can go a long way with soy by demonstrating how to quickly fry up some scallops with fresh tender-stem broccoli and a Kikkoman-based sauce. I really enjoyed the cooking demos and the opportunity to visit Matsuri for a first time. I was especially impressed with the sushi and with the fine dining restaurant’s excellent and evocative décor.

Man oh man! I got an education last night from Jaume Beato, lead bartender at Gillray’s Steakhouse & Bar at the Marriott Hotel County Hall. From a crash course in the history and global reach of gin (Gillray’s keeps close to 70 different gins behind the bar) to how to mix a classic cocktail, Beato proved his merit with affable demeanour.

Here, the adept barman is pictured working on a Zacapa rum based cocktail – The Last Instinct – for yours truly. After Jaume’s liquid lessons, I got a steak. Stay tuned for a review of my meal excellent meal at Gillray’s to be published here on the blog soon.

An Interview with Chef Albert Roux (Great British Chefs)

Back during the first full week of October when The Restaurant Show 2013 was on at Earls Court, Chris Osburn had the pleasure and honour of sitting down for a quick interview with legendary French-born restauranteur and chef Albert Roux. The chef was at the exhibition to speak about his quarter century “love affair” with baking goods brand Bridor.

Albert Roux is renowned for his work at La Gavroche, the Mayfair restaurant which he opened with his brother in the late 60s – and which went on to receive a Michelin star and then to become the first in Britain to attain three stars. Roux is credited for helping launch the careers of some of the world’s most celebrated chefs, including Marco Pierre White, Gordon Ramsay, Pierre KoffmannMarcus Wareing and of course his son, the fellow Michelin star chef and television personality, Michel Roux Jr who now runs La Gavroche.

These days, the affable 78 year old seems as pleased or perhaps even more so to talk about the recent successes of his son as he is his own achievements. My interview with Albert Roux felt more like a friendly conversation as he shared memories from the early days of his career along with advice for up-and-comers in the restaurant industry today.
